“Our wish for our daughters and the future generations is to find a way to slow down a little bit, giving priority to important values in life such as family… relationships and care for nature… we want a Trentodoc produced with all the time it needs to define itself in structure and equilibrium, to obtain a wine which has something to tell, something to discover… and provide enjoyable discussion…”
– Chiara Pedrotti
Iconic family owned winery in Trentino, Italy, specialising in Trentodoc (metodo classico Italian sparkling wines).
The winery is now run by their 4th-generation female winemakers - Donatella and Chiara Pedrotti - who lend elegance and a distinct perspective on winemaking to their wines.
The family is passionate about their local territory and quality winemaking, which includes remuage by hand on reserves and lees aging in bottle for at least twice as long as that required under DOC rules in a historical and natural cave.
Its guiding philosophies? An unrelenting focus on quality (which transmits in the finer details), matched by a determination to showcase the vocation of Trentino for sparkling wines.
The winery was an early adopter of allowing their wines extended periods of lees aging in bottle, giving their wines all the time they need to define themselves in structure and equilibrium. The winery also works with a real respect for nature, with the goal of preserving it for future generations.
The result: limited-production, artisanal fine Trentodocs which are a clear expression of the terroir. Their sparkling wines are characteristically fresh, elegant & complex, with luxuriously fine perlage.
